For making quick pickled red cabbage; first, separate and discard the outer leaves of about 1 kg of red cabbage. Then, wash and dry it thoroughly. Next, cut the red cabbage into 4 equal pieces and finely shred each piece using a knife. Shredding the cabbage as thinly as possible will help the pickle to be crunchier.
Put the shredded red cabbage into a large bowl. Add 20 g rock salt, 10 g granulated sugar, and 2 cloves of crushed garlic over the cabbage. Then pour 200 ml vinegar and the juice of 2 squeezed lemons. Rub the red cabbage thoroughly with your hands for about 5-6 minutes. This process will cause the cabbage to lose its stiffness, soften, and release its water. Be sure to use gloves at this stage to prevent your hands from being stained. After the pickling massage is complete, pour 75-90 ml olive oil over it and mix well.
On the other side, tightly pack the prepared red cabbage evenly into 2 half-liter jars using your hands. Finally, add the water released during the rubbing stage until it covers the cabbage. If the remaining self-released water in the bowl is not enough, you can top it up by pouring drinking water over the cabbage. Then, close the lids of the jars tightly and refrigerate.
You can serve the pickled red cabbage you prepared after letting it rest in the refrigerator for about 2 hours. You can also store your pickle in the refrigerator for approximately 1 month.
