For making doner kebab from minced meat ; put half a kilo of low fat minced meat into a deep bowl. Grate 1 onion separately and squeeze out its juice thoroughly. Pour the squeezed onion juice over the minced meat.
Then, add 1 teaspoon of salt, 1 teaspoon of red pepper powder, half a teaspoon of cumin, and half a teaspoon of black pepper into the bowl. Knead very well until all the ingredients are fully integrated and reach a paste-like consistency. This is an important trick to prevent the döner from falling apart.
Divide the prepared minced meat mixture into 4 equal parts. Using a rolling pin, flatten each part as thin and uniformly as possible between two sheets of baking paper. After flattening, gently lift the top baking paper from the mixture. We recommend using unbleached natural baking paper. Then, roll these thin minced meat pieces, together with their paper, into a log shape, not too tightly. Place the rolls inside a baking tray lined with baking paper. Put it into a preheated oven at 200°C. Bake for approximately 20-25 minutes. During this process, when your döner is cooked, there might be some liquid in the tray. You can take the tray out, drain the liquid, and put it back in the oven to continue baking.
After the minced meat döner rolls baked with baking paper are cooked, take them out of the oven. Remove the cooked döner from the baking paper and tear them into desired sizes by hand.
You can serve the prepared minced meat döner hot, either over rice or inside bread or lavash.
