For making pickled red onions; peel and wash 6-7 medium red onions. Slice the onions thinly into rings or half-moons.
Then, tightly pack the onions into 2 medium-sized jars. Add some coriander seeds and a few black peppercorns over the onions to give aroma. You can omit them if you prefer. Next, add 20 g rock salt, 10 g granulated sugar, and 110 ml vinegar to each jar. Finally, pour boiling water over the contents of the jars until it covers the onions. Seal the jar lids tightly. The lids will be vacuum-sealed by the hot water during this process. Before using your jar and lids, sterilize them and ensure they are clean. Always use new canning lids.
You can serve the pickled red onions you prepared after letting them rest for 1 day in a cool, dark place. After opening, you should store them in the refrigerator. If you are not going to consume your pickles immediately, you can store them for up to 6 months in a cool, dry place away from sunlight or in the refrigerator.
