For making mixed cabbage pickles; first, separate and discard the outer leaves of 1 kg of white cabbage and half a kg of red cabbage. Then wash them thoroughly. Next, thinly slice the white cabbage with a knife. Then, thinly slice the red cabbage with a knife as well. Grate 3 carrots using the coarse side of a grater.
Place the sliced white cabbage, red cabbage, and grated carrots into a large bowl. Mix all ingredients well with your hands.
On the other side, place two cloves of garlic into each of the 3 one-liter jars. Then, tightly pack the prepared cabbage mixture into the jars, pressing firmly with your hands. Place 2 more cloves of garlic on top of the cabbage in each jar.
Next, add 1 tablespoon of rock salt, 1 teaspoon of granulated sugar, and 1 tea glass of vinegar to each jar. You can use apple cider vinegar or grape vinegar. Finally, pour enough boiling water to cover the cabbage. Close the jar lids tightly. Leave the pickles to rest for 1 day in this manner. During this process, the jar lids will vacuum seal due to the heat of the pickles. Make sure to sterilize your jar and lids before use and ensure they are clean. Always use new canning lids.
You can serve the prepared mixed cabbage pickles after waiting 1 week in a cool, dark place. Once opened, you must store your pickles in the refrigerator.
