For making Mediterranean style red cabbage pickles; first, peel the outer leaves of 1 kg of red cabbage. Then, wash the cabbage thoroughly in plenty of water. Next, cut the cabbage in half and shred it into very thin strips with a knife. You can easily do this using a vegetable peeler.
Place the shredded cabbage into a large bowl. Sprinkle 1 full tablespoon of rock salt over them. Then, rub the red cabbage thoroughly with salt using your hands for about 5 minutes. This process will cause the cabbage to lose its firmness and soften. Be sure to wear gloves during this stage to prevent your hands from being stained.
On the other side, fill the 2 half-liter jars with the rubbed red cabbage, pressing it down firmly with your hands. Distribute the water released during the cabbage-rubbing process over the cabbage as well. Then, place two cloves of garlic on top of the cabbage in each of the two jars. Next, pour half a small glass of vinegar (55 ml) into each of the two jars separately. Finally, squeeze the juice of 1 lemon and distribute it equally into both jars. Then, pour drinking water until it covers the cabbage. Close the jar lids tightly. Make sure to sterilize your jar and lids before use and ensure they are clean.
Leave the prepared restaurant-style pickled red cabbage in a cool, dark place for 1 day. Occasionally turn the jars upside down to ensure the water inside is evenly distributed. Then, place them in the refrigerator and you can serve them after waiting 2-3 days. You can also store your pickles in the refrigerator for about 1 month.
