Wash the zucchini, dry. Cut a thin slice in lengthwise. Remove into the zucchini with the dessert spoon or knife.
Put vegetable oil into a deep pan. Cook each side of the zucchini in hot oil.
On the other hand, put finely chopped onion and garlic into a large pan. Add olive oil onto, sauté for 2-3 minutes. Then, add the minced meat. 3-4 minutes, cook stirring. Then add the chopped tomatoes and peppers. Add onto salt and spices. Cook thoroughly.
Put the fried zucchini into ovenware. Fill the mince mixture into the pumpkin. Give a preheated 180 degree oven. Cook for 10-15 minutes.
Remove cooked stuffed zucchini from the oven. Garnish with finely chopped parsley on to stuffed zucchini. Then, serve hot.
