Break the eggs into a deep bowl. Add milk, vegetable oil, baking powder, salt and flour. Stir with mixer or wire whisk until smooth and fluid consistency. Add finely chopped olives, tomatoes, pepper and thyme and stir again.
Put oil onto the pancake (crepe) pan. Heat over medium heat. Get a small scoop of pancake mix (not completely fill) and pour into the pan.
When dough begins to form pores, turn the other side with the help of a spatula. Cook the other side for a while.
Take the cooked pancakes on a serving plate and serve hot or cold.
