Put granulated sugar and cinnamon in a mixing bowl and mix them.
Put milk, sugar, walnuts and cinnamon into a deep bowl. Add egg whites, cocoa, vanilla and the bread crumbs. Mix thoroughly with a spoon.
Sprinkle flour on the table. Spread puff dough onto the table. Use dough with a rolling pin to make the dough thinner. Put the prepared mortar onto it as shown at photos. Close triangular. Roll the triangle and make a half-moon shape.
For the over of puff pastry croissants, put one egg yolk a bowl. Add 1 tablespoon of water and stir with a fork.
Put a wax paper on oven tray, then put the puff pastry croissant on oven tray. Apply egg yolk on a croissant. Sprinkle a plenty of sugar. Take the oven tray in to the preheated 190-degree oven, and cook until its color turns golden brown.
Finally, take the baked puff pastry croissant from oven and leave them to be cool. Then, you can serve them with a soft coffee or tea.
