Finely chop lettuce, dill and parsley. Cut red pepper and cucumber into tiny cubes.
Put pinto beans into a deep bowl. Add chopped lettuce, parsley, dill, red pepper and cucumber onto. Finally, add sumac, mint, olive oil, lemon juice and salt onto and mix well. Then, serve.
You can also add yoghurt along with this Pinto Bean Salad. If you like as an option you can add to the salad fresh onions, tomatoes and corn.
