Chop onion, garlic and the peppers, finely. Then, chop the tomatoes into cubes. Put oil in a wide pan. Add chopped onions, garlic and peppers. Saute for 3-4 minutes. Then, put the minced meat. Cook until it changes color. Finally, add tomatoes. Sprinkle salt and pepper. Cook tomatoes until tender. Then remove the pan from stove.
Put the 1/2 canned burnt eggplant in a deep bowl. Add yogurt, salt and grated 1 clove garlic. Mix with a spoon. Spread the mixture onto a serving plate. Then, put the minced meat with sauted vegetables.
If you do not want to use canned burnt eggplant, you can make the burnt the eggplants by yourself. Follow the directions below.
How to make burnt eggplant?
Take 3 pcs eggplant. Dip them in several places with a knife. Place the eggplant directly on the gas flame or stove (or oven) and turn the eggplant occasionally to make sure its skin is burnt all around. Then place the burnt eggplant into a bowl. Cover with plastic wrap and leave it to cool. Then remove the skin of eggplant.
Finally, before serving, melt the butter in a small pan and add the peppers. When it starts bubbling and pour over. Decorate with parsley and serve.
