Brush the fresh potatoes, and wash them thoroughly. Cut the potatoes into two-three pieces. Then put into a small pan. Add hot water and boil the potatoes over high heat.
Drain the water of boiled fresh potatoes. Leave to warm. Cut the potatoes into big cubes. On the other hand, chop parsley, fresh thyme and onions.
For the sauce of salad, put olive oil, lemon juice, salt and mayonnaise into a small bowl. Mix well with the help of a spoon. Add chopped parsley, fresh thyme, onions and fresh potatoes into the bowl. Pour the prepared sauce onto the salad. Mix well with the help of a spoon.
Put fresh potato salad into a serving plate and serve.
