Peel the potatoes and wash them thoroughly. Cut the potatoes into two-three pieces. Then, put into a small saucepan. Add hot water and boil the potatoes over high heat.
Drain the water of boiled potatoes. Then, add butter onto potatoes. Mash with a fork until pureed or mix with blender. Leave to cool. Add egg yolk, salt and black pepper onto and knead well with your hands.
Transfer to a large piping bag fitted with a 1/2-inch star piping tip and pipe 12 round mounds onto each prepared baking sheet, spacing them about 2 inches apart. Give in a preheated 200 degree oven, and cook until it turns golden brown.
Remove the duchess potatoes from the oven. Serve hot.
