Put 2 cups hot water into the saucepan. Sprinkle a little salt. Pour 1 tablespoon olive oil. Put barley noodles and boil until tender.
On the other hand, cut red pepper, cucumber and pickles into mini cubes. Finely chop dill and green onions. Grate carrot.
Drain the water of boiled barley noodles. Rinse barley noodles with cold water.
Put the barley noodles a deep bowl. Add chopped pepper, pickles, canned corn and grated carrot. Put finely chopped dill and green onions. Finally, sprinkle a little salt. Pour olive oil and lemon juice onto barley noodles. Mix well.
Place the barley noodles into a serving dish and serve.
